Roasted Eggplant with Marinara Sauce

This is an easy healthy vegan friendly recipes for roasted eggplant with a lot of flavor.

Garlic

 

 

 

Ingredients:

2 Medium egg-plants (Sliced in inch circles)

2 teaspoon of salt

2 teaspoon of freshly ground pepper

2 Cloves of Garlic (Sliced Thin)

4 Serving of Treys Italian Classic Marinara Sauce

Sprinkle of Olive Oil

Equipment:

2 Sheet pants or one Hotel Pan
Chef knife

Sauce pan to heat up the Sauce

One Table Spoon

2 paper towels

Procedure:

Preheat oven to 350

  1. Lay the slices on the sheet pan Salt each slice of eggplant Let sit for 30 minutes at room tempter (This is to draw some of the moister out also pat the vegetable dry with paper towels)
  2. Lightly Sprinkle with Olive oil on both sides
  3. Add the sliced garlic
  4. Put in oven for 40-60 minutes or until the eggplant is soft
  5. Heat up Trey’s Italian Classic Marinara Sauce in a sauce pan it should take 5 minutes on medium low
  6. Plating (Chose the correct plate ware) using your table spoon add a little sauce to the plate add one quarter of the eggplant to each plate top with sauce.
